Much Love Monday: Moo-Less Chocolate Pie

Do you ever watch Good Eats? That show is so dated, in Apple Family Values episode, they mentioned Apple computers as a dead computer company, along with calling corn syrup the “future” and I lost interest. My DVR kept recording and before I erased all the recordings, I watched “Tofu World”. Then another episode and another. Now, it’s one of my favorite shows on the Cooking Channel. Sure, I could do without the irrelevant commentary, but the recipes and advice on classic kitchen gadgets are as true now as they were then.

Here is the original recipe, but here is my version;
For these you just need a double boiler (I love this one), a food processor or blender, a spatula and a pie tin.

13 ounces semisweet chocolate chips
1 tsp vanilla extract
1 pound silken tofu, drained
1 tsp agave
1 tsp nutmeg
1 tsp cinnamon
1 pie crust (I used this recipe)

Melt the chocolate chips in the double boiler and stir with the spatula. Combine the tofu, chocolate mixture and agave in a blender or food processor and spin until smooth, about 2 minutes. While spinning, add the vanilla, nutmeg and cinnamon. Pour the filling into the crust and refrigerate for 2 hours, or until the filling sets firm.

Moo-Less Chocolate Pie recipe is a gem. It’s one of the best, fastest things I’ve made and I can’t wait to trick my friends when I tell them “boom, you’re eating a tofu pie”. I just hope they don’t return the same surprise with a soy allergy.

New Pink Chalkboard Door

I have a pink kitchen but my dining room is a little plain. It has a white table, clear chairs, and a couple pink frames. I needed that extra pop of something that requires more less time, money and effort. I’m not afraid of color (I mean, my office has a lime green door on it) and I’m willing to get a little dirty if it means saving some money!

I’ve seen a ton of black chalkboard all over Pinterest, but pink? It wasn’t available at a general craft store. I found Pink Chalkboard Paint on Amazon. I bought two small jars and ended up using one, with about 4 coats on the door. A little goes a long way with this brand!

I wasn’t sure how to prep the door, but I found this amazing, AMAZING tip on Pinterest!!

I’m not very good at painting, and I was a little messy. Apparently you have to pay attention to these things.

I use it mostly not for the color but honestly for organization. It’s a meal planner, a shopping list, a to-do list, or just for love notes.

Overall, I’m really really happy with it, the color from this brand is HOT pink, but that’s exactly what I wanted.

I always see cool projects online but I feel I’m either not talented enough, or I won’t love it enough to devote time and effort to it. Now I can say I’ve tried the chalkboard trend and I absolutely love it!

Much Love Monday: Mini Vegan Donuts

Every Friday night, Scott and I would walk down to the donut shop down our street to pick up a dozen donuts. Yes, one box of donuts for two people. It’s as disgusting as it sounds. On Saturday mornings, I would wake up in pain and groggy from the wild night my body experienced with the calorie-filled donuts. I know those donuts are horrible for me, but I still miss them. After trying all kinds of vegan pies, cupcakes, muffins and tarts, it could never replace the donut for me. Thankfully I came across VeganYumYum’s Mini Donut recipe. I changed a few things around the recipe, to make it a bit healthier for my family. Here is my version:

First, I used a non-stick heart shaped donut pan. I wouldn’t recommend using a KitchenAid mixer for this, all you need is a whisk, a couple large and mini mixing bowls, and a saucepan.

Mix all the dry ingredients together:
1 Cup Whole Wheat Flour
1/2 Cup Coconut Sugar
1 1/2 tsp Baking Powder
1/4 tsp Sea Salt
1/4 tsp Nutmeg
1/4 tsp Cinnamon

Add wet ingredients to saucepan and warm ’till the butter melts
1/2 Cup nut milk
1/2 tsp Apple Cider Vinegar
1/2 tsp Pure Vanilla Extract
Egg Replacer for 1 Egg (I used Ener-G)
4 Tbs Earth Balance Vegan Butter

Add dry ingredients to saucepan and mix. It’ll have a wet-dough consistency but don’t overcook it or you’ll ruin it (like I did the first time I tried this).

Add to pan. Just a little warning- don’t overfill and smooth out. The original recipe warns about this or you’ll come out with a muffin top. I see this daily, I don’t need to see it in my actual donuts.

Bake for 12 min, let ‘em cool and mix the toppings
1/2 cup powered sugar
1 tbs nut milk
now, dip them in the glaze, sit for a quick second and then dip them into sprinkles!

That was my favorite part other than eating them. You can also find a cream cheese glaze here but alternate the dairy cream cheese with Tofutti’s.

So there you have it, mini vegan donuts. Mine are a lot darker because of the ingredients I used, but I recommend checking out the original from VeganYumYum.

on going vegan (again)

When I heard first heard about the idea of going vegan years ago, I thought it was only for “rich people”. Seriously. I thought organic was only something hippies did, and the word “compost” was something only a farmer had. 15 years later, not only am I vegan, but I only purchase organic and having a custom compost built in my backyard. I decided to try vegan the first time as an experiment for one week and then document the week after. I loved it so much, I stuck with it for months. Then, I became lazy. Instead of eating veggies and fruits, I ate a lot of “junk vegan food”, like over processed soy products, microwaveable everything, not taking my vitamins, and what could be a sea of Diet Coke. I was sick, tired, losing my hair, and having blotchy skin.

So, I stopped with the “vegan”. I didn’t just go back to eating meat, I revolved to a full 180 degrees. I gained back my 40 lbs lost, and I no longer had blotchy skin or hair loss. I did however have oily gross skin with oily hair. You really are what you eat. Of course, with eating gross food comes feeling gross. I got sick. My pancreas, kidneys, and colon were so swollen I had to get surgery. I felt like this should have been a slap in the face with a cold pizza, but instead I grabbed that pizza and ate it, and no not just metaphorically. My diet didn’t change much for 2011.

My vegan diet was accidental. I cut out meat for the holidays and I felt better. I cut out dairy. I began implementing raw food in my family’s diet. I upgraded our CSA to the largest size they had. I discovered veggies I never knew existed, embarrassingly. I grew up on a good diet, but not enough to know what the difference was between the classes of squash. I have my own reasons to go vegan. It’s not for the weight loss, that is a plus, but it has a lot to do with my own personal health.

I’m tired of being tired. I’d like to go out with friends and not wonder if I’ll have to get sick. I’d like to plan a baby and not worry about doubling my chances of diabetes. I’d like to wake up not wondering how many aspirins I’ll be taking. I’d like to know the food I’m eating will beat the cancer that runs in my family rather than feeds to it. I can go on and on. I’m still getting used to the lifestyle (I just peeled my first onion last week and it was a tear jerker- zing!), and I’d like to do it without sounding so darn preachy about it, you know? I remember reading about a healthy lifestyle and rolling my eyes, scoffing at a the computer screen, wondering if I should sign up the blogger for the cheese of the month club as a joke.  I can’t afford to be whine like I’m 10 years old because I’m actually an adult (don’t let the pink hearts and Hello Kitty fool you). I should be mature enough to stop complaining about veggies and exercise. I even went back to those blog posts years ago and read the healthy posts as an inspiration with a different perspective.

The 10 year old in me feels so fancy when I see that huge salad and thinks this is for “rich people”, but really I am. I’m getting rich in health. And that’s enough to stop playing with my food and eating it.

I have some strong women with strong opinions reading this blog (amen!) and I realize everyone has a different story for going vegan, and not being vegan, and this is mine. I’d appreciate all the support!

goodbye, 2011

This is the one of the last posts on our.city.lights for 2011, so it’ll be appropriate to walk down memory lane.

2011 started off with a trip to the ER.

In February I shared why I love digital reading so much.

In March, I mourned for a country I’ve never been to. We were supposed to leave 2 days before the tsunami earthquake to Tokyo.

Barely recovered from surgery, I celebrated my 30th birthday in Rome and our 3rd year anniversary in Florence.

In April, my blog had a makeover.

In May, I was home for one night out of the month, really. I left to Canada and Utah to listen to Scott lecture. I was the librarian’s roadie.

In June, I visited the iconic Madonna Inn and we bought our first house!

In July, I was in Lomography’s Top Bloggers Who Use Analog and let go of some issues I was dealing with.

In August, we bought our first dog together (and the first dog I’ve owned!).

In September, I accepted and learned to love myself 100%.

In October, I decided to go after a gutsy goal, and I picked up learning to play the guitar.

In November, I realized I overcame my biggest fear, and visited Santa Barbara for the first time.

This month, I reached my goal, and the closest friend I met through blogging returned to blogging.

Here’s to more growing, awareness and adventures in 2012!

Insta-Cook

For the past few weeks, I’ve been documenting my cooking on Instagram. Some dishes are tasty and some I’m never making again (my apologies to Scott for being my guinea pig). With cooking, I noticed I can cook each side of the pendulum, either very meticulous and militant to follow a recipe, or just delicious accidents with experimenting in my mixing bowls.

Why so much cooking lately? A larger kitchen (I was always discouraged from the small 3 foot counter space I had before), living with less kitchen gadgets, saving money, and reading the book, The Art of Eating In. It’s an inspiring book about Cathy Erway, blogger turned author. She experimented eating in New York City, where the abundance of restaurants are available on almost every block. She didn’t give directions on how to eat in exactly, but she told her story and that was enough for me to change the way I viewed my kitchen and eating habits.

Just like Erway, I’ve come to appreciate where my food is coming from, and how much amount of salt/sugar/flour/love/frustration goes into each bite. Sometimes I really love it, sometimes it’s out of convenience because I’m too lazy to put on pants and go out, and sometimes, I really do resent the process. But when I fork down that ridiculously indulgent salmon en croute for example, I forget the work I have, or even the chill draft from being pantless (omg, just try it already), emails or anything on my mind.

I used to think eating out was such a luxury, but after doing it for years, it’s a habit I’m trying to break for Scott and I. Not only are our conversations more fulfilling, but so are our tummies. That’s the ultimate luxury (besides the no-pants thing, of course). You can follow the culinary joys and failures on instagram.

What’s Cookin’

Every once in awhile, I find small pockets of the Internet filled with blogs I love. Tenacious Dee is one my favorites (she’s been featured as my “fave of the week” on my sidebar a couple times!), and I always look forward to her updates. She has a feature on her blog called What’s Cookin’ and I’m happy to share a great recipe. It was an delicious accident but I’m so glad I documented what I did, because it’s one of the most decadent things I’ve ever eaten and I can’t believe I made it. Read all about it HERE. New Traditions

Our official holiday begins with watching the Christmas tree being lit at Disneyland, strolling through Mains Street, holding hands, and the other hand holding a cup of hot chocolate. It’s cheesy and totally romantic. It also lets us know to put out our pink Christmas tree, get the dogs Christmas sweaters (I told you, we’re cheesy!) and enjoy our holiday.

Merry’s New ‘Do

Merry

We had a chance to adopt Merry a couple months ago, after a family member gave her up due to financial burdens. She’s an 8 year old Maltese and is one of the most well behaved animals I’ve ever met. She was a little shaggy, and as easy it was to cuddle with her, I couldn’t help but notice her heinous odor. Merry (named after Merry Brandybuck, to befriend Frodo) finally had her hair cut and was freshly groomed today. She has the bangin’ bangs now, too. If you’re in the Orange County and Long Beach area, Curbside Cuties did a wonderful job on Merry. Let’s see how cute she is…
